Where to find real barbecue around the Sacramento region

Real barbecue is a method and a set of regional traditions, and the Sacramento region has more of both than most people who live here give it credit for. This is where I send people who ask, what the styles actually mean once you sit down with a plate, and how I would choose if you only get one meal out of it.

In California, grilling and barbecue get used as if they were the same word. They are not, and the difference is not snobbery. It is a cooking method, and it changes what shows up on the plate. The honest warning is that the good spots are spread wide. Freeport, Placerville, Auburn, Woodland, Davis, Roseville and Diamond Springs are all on this list, and none of them are next to each other.

THE DIFFERENCE IS IN THE COOK, NOT THE SAUCE

Grilling is high heat and a short window: a steak or a burger over fire, the fire doing one job quickly. Barbecue is the opposite. It is a cut of meat held at a low temperature for hours over woodsmoke, until the connective tissue breaks down and the meat goes soft.

Rub, sauce and marinade are seasoning. They are not the method. A place that finishes ribs on a hot grill and brushes them with sauce has made something good, and it is a different thing from what a pit does overnight. Texas cooks will tell you the dry rub is the whole story. Carolina cooks will tell you the sauce is. Both are describing the same technique from opposite ends.

WHERE TO EAT IT, AND WHAT EACH PLACE IS KNOWN FOR

  • Brody’s, in Freeport. A rustic riverside spot west of Elk Grove, with house-smoked chicken, tri-tip, pulled pork, ribs and sausage, and meat that can arrive in a morning burrito or on waffle fries instead of a plate.
  • Tank House, in midtown Sacramento. Brisket, pulled pork and baby back ribs in the middle of the city, group platters that feed a table, and a patio backing onto an 1881 water tank house.
  • Hog Wild Bar-B-Que, in Placerville. Meat smoked for hours over cherry wood, house-made rubs doing most of the talking, and sauce for the people who want it.
  • Ludy’s BBQ, in Woodland. Combo platters and family packs, which makes it the one I would pick for feeding a group, with poppyseed cornbread and mac and cheese alongside.
  • Smokey Pit BBQ, in Auburn. Texas style, no frills, your choice of sides, and a house sauce you can take home by the bottle.
  • Belly Barbecue, in Folsom. Also Texas style, with pork belly in a bourbon and pear glaze, cheese grits, and a Georgia-inspired Brunswick stew for the cold months.
  • Urban Roots, in Southside Park. Half barbecue joint, half brewery, which is either exactly what you want or exactly what you do not. Burnt ends, collard greens, beer brewed on site.
  • Bear West BBQ, in North Highlands. St. Louis ribs, chicken, tri-tip, pulled pork and hot links, with candied yams and banana pudding on the side.
  • Bull ‘n Mouth, in Davis. A pub with a serious smoked section: beef ribs with house sauce, chicken with Alabama white sauce, and hush puppies.
  • Back Forty Texas BBQ, in Roseville and Shingle Springs. Two locations, long running, and the only place here that also does steak, salmon and prime rib.
  • Poor Red’s BBQ, in Diamond Springs. Open close to a century, best known for cocktails and hearty plates, with barbecue running to ribs, chicken and pulled pork.
  • Daddy O’s Smokehouse, in Rancho Cordova. Family recipes, low and slow, with soul slaw, beans and candied yams beside the brisket and pulled pork.

THE FOUR STYLES YOU ARE ACTUALLY CHOOSING BETWEEN

  • Texas. Beef country. Brisket smoked over oak with a simple dry rub, and often no sauce at all.
  • Kansas City. Beef and pork both, with burnt ends as the signature bite and a thick, sweet, tomato-based sauce over the top of it.
  • Memphis. Pork, especially ribs and pork shoulder, dry rubbed and cooked in a pit, with the sauce served on the side rather than brushed on.
  • Carolina. Pork again, whole hog or shoulder, smoked over hickory, pecan or oak, and finished with a thin vinegar sauce or a tangy mustard one.

THE COMPARISON I REACH FOR, AND WHERE IT STOPS WORKING

The closest ordinary thing I can think of is pizza. Nobody argues that one city invented it. They argue about the crust, and the argument turns out to be about where the person doing the arguing grew up.

That gets the instinct right, and then it oversells it. Barbecue is not one dish with regional variations the way pizza is. It is different cuts cooked different ways, and the styles disagree about what the meat is even for. A place that turns out beautiful brisket can be ordinary at pulled pork, which is why the safest way to judge one is to order the thing its own tradition is built around.

HOW I WOULD PICK IF YOU ONLY GET ONE MEAL OUT OF IT

  • Go for the style, not the reputation. If brisket is what you want, go to a Texas place. If it is ribs, the Memphis and Carolina traditions are built around them.
  • Go early. Smoked meat is made in a limited batch and it runs out, so a late afternoon order is a gamble anywhere that genuinely cooks overnight.
  • Read the sides. Cornbread, greens, beans and slaw made from scratch are the cheapest evidence that somebody in the kitchen cares about the whole plate.
  • Ignore the building. In most regions, the best barbecue is served somewhere that does not look like a restaurant at all.
  • Do the drive once. Freeport and Diamond Springs are not on the way to anything else, so spend the trip on the place you actually want to eat at.

WHAT I WOULD TELL YOU TO WEIGH

  • The drive is real. Forty-five minutes each way for lunch is a decision rather than an errand, and the places furthest out are not automatically the best.
  • Platters are built for sharing. Ordering a la carte for one person is how people end up with more food than they planned on.
  • Weekend lunch is the crush. The rooms are small and none of them take reservations, so a weekday is the same meal with less waiting.

If one of these towns is part of why you are thinking about a move, start with what Woodland is like to live in, since it is a town I get asked about often and it has a barbecue counter on the list above. And the buying process page walks through what actually happens between an offer and keys, including the parts that are not fun.

Question for you: which barbecue spot around here would you send a visitor to, and what should they order when they get there?
